Our Beers

Happy Pills Pilsner

Our Pilsner isn’t trying to be an exact version of the traditional style. It’s more what you would call a ‘new world’ style pilsner, with generous additions of hops from the ‘new world’.

It has been described by Crafty Pint as “close enough for purists to enjoy, and unapologetically easy and pleasing to drink, with a pleasing crispness and gentle bitter bite, matching a supple creamy softness”. We’ll take that. Unless you hate hops, you will enjoy our version of pilsner.

ABV 5.0%, IBU 20-25

Malt – Pilsner, Munich, Wheat

Hops – Super Pride of Ringwood, Hellertau, Ella, Enigma

Darkside Dark Ale

Our Darkside Dark Ale is not quite black but darker than brown. It’s not thick like a porter or stout. While it’s full of malty flavours, those are balanced by generous lashings of hops.

Crafty Pint reviewed this beer and said “the understated attraction of Bulli Brewing’s core range of beers is Darkside, a beer that sits comfortably in no category other than perhaps ‘generic dark ale’. Not too roasted in flavour, hints of coffee, toffee, chocolate fill your mouth, and then the hops roll in to make this a dark beer that can be had on a sunny day”.

ABV 5.5%, IBU 35-40

Malt – Ale, US Ale, Chocolate, Roasted Barley, Medium Crystal, Munich, Wheat

Hops – Super Pride of Ringwood, Galaxy, Ella

Pauline Red IPA

Not as red as a red wine, but in beer terms this is a red ale. Well hopped but not quite enough alcohol to make it an IPA, Pauline sits between a few typical descriptive beer categories.

While it’s not a heavy beer, this is a full flavoured ale. Slightly malty with hints of toffee, burnt fig and caramel to balance the hops. Pauline is not a sweet ale, as we have been generous with the hops, adding them at various stages in the kettle as well as dry-hopping in the fermenter. Hop bitterness and some fruity notes come through.

ABV 6.0%, IBU 45-55

Malt – Ale, Shepherds, Aurora, Light Crystal, Medium Crystal, Munich, Wheat

Hops – Super Pride of Ringwood, Ella, Enigma, Tomohawk

Eurale Belgian Pale Ale

To paraphrase Crafty Pint, “it’s a Belgian pale ale and it’s one which most immediately marks itself out as different from your common new world pale ale by virtue of its yeasty esters and phenols. These contribute aromas of banana and spice which then meld in with fruit character on the palate”.

We keep the Belgian yeast tones under control. Low level of hopping and most of it Hellertau, hops are not a dominant characteristic. Goes great with Asian food, fish, chicken, and cheese. Some enjoy it with a wedge of lemon. This is a beer that finds friends wherever it goes.

Hops – Super Pride of Ringwood, Hellertau

Märzen Cream Ale

Brewed specifically for our friends at the German Club Wollongong to celebrate Oktoberfest. This is a medium-bodied, easy-drinking beer with a creamy finish. Low in hops, it’s not your typical ‘craft beer’.

Surprisingly our Marzen Cream Ale has been a big hit with a wide range of customers, so much so it could become one of our staple beers.

ABV 5.3%, IBU 15-20

Malt – Pilsner, Light Crystal, Munich, Wheat

Hops – Hellertau
